Phở Meat

Part of what makes phở so good is what goes in the broth. Aside from the spices ( which you can see here: fridgg.com/photo/635 ) the beef bones and big chunks of chuck (along with roasted onions and ginger) are what give the broth its richness and flavor.

I asked Allison to make me phở for my birthday - this is a photo of the fall-apart-at-the-touch-of-a-fork meat that went into the broth, after the phở was done cooking.
