Brussels Sprouts, Caramelized Shallots, Fish Sauce, Prawn Crackers

I've always had an odd sort of fascination with Brussels sprouts. Some people love them, some people hate them. But it wasn't until I was in my 20s, after graduating from college, that I actually tried them for the first time.

I've actually always liked Brussels sprouts, since the first time I tried them a year or two ago. When prepared right, they're actually pretty good... perhaps not my favorite vegetable out there, but I enjoy them. But oh man... if I could eat this dish from Red Medicine whenever I wanted, I would have Brussels sprouts every single day. It was SO good.

They weren't chewy, or bitter, and didn't taste anything like raw Brussels sprouts. The fish sauce gave them a very Asian flavor without being overwhelming - they were perfectly caramelized. I couldn't stop eating them. I honestly think this dish would make even the most vehement of Brussels sprouts haters actually enjoy the vegetable.
