Squid ink, calamari, parsley - from Trattoria Corso in Berkeley, CA

I'm not much of a fan of octopus. But that risotto was delicious, and I just love the effect they achieved by mixing in the squid ink. To watch the chefs cook this... it almost seemed magical, the way the dish started out a pristine white, and ended up jet black.
