Baba Ganoush

Revisting baba ganoush. I used to put it through a food processor to make it smooth, but I really love this method of preserving some of the eggplant texture by beating it with a fork. That combined with grilling (charring) the eggplant and draining off the excess liquid results in the very best baba ganoush I've had to date!
