Gluten-free Christmas Cookies (Pryaniki) are so soft and covert in the best icing. This is a classic Russian cookie. They are not your typical Christmas cookie, they are so much softer. The dough is made with greek yogurt, sugar, egg yolk, baking powder, almond flour, and gluten-free flour. This cookie is a must-have in my house every year. I just can’t get enough of them.
