This week I'm taking you to Hawaii for some Loco Moco. I've been working on my version for 6 years now, and I make the hamburger Japanese-style (which is juicy and studded with sweet onions). That goes on a pile of rice and gets draped in a curtain of mushroom pan-gravy that's overflowing with umami. Of course, there's a sunny side up egg, but I also add some crispy fried shallots on top. It's insanely satisfying, and yet it's not that complicated to make. Also, because my gravy is thickened with potato starch, it's ultra glossy and won't seize up or get gummy, which makes this a great bento box entree.
