Corn Potage

When corn season🌽 is in full swing, and after I've had my fill of corn on the cob, I love using a few ears to make Corn Potage. It's a Japanese soup (by way of France), that's rich, creamy and velvety smooth. For my version I've simplified it down to a handful of basic ingredients and yet it's chock full of satisfying umami.
