Catfish "unagi"
Since unagi (eel) is not a very sustainable choice, I made this fake unagi using baked catfish and eel sauce. It tastes almost the same, and is an excellent (and inexpensive) replacement!

I use catfish, too! When people try a "Cat"erpillar Roll, they can't believe it's not eel.
Nice! Yeah, it's crazy how well it works as a replacement!
