Bamboo Forest - Thanks, they were pretty good!

Nicole - I'm so glad you liked them! I'll definitely post the peanut butter cookie recipe soon... or you can just wait for me to send you more. ;)

Nate - You probably could, though once the chocolate cools, it's not really too messy to handle.

Tracy - Isn't she fantastic? :D I LOVE the Girl Scout thin mints, but these were pretty good as well. :)

Ezra - This was the ricotta recipe that I tried, and failed miserably. If you try it, I'd love to hear how it worked for you, and if you have any tips about making it. :)

Oh my goodness, these look so good! I am also the sort to try to cook anything after eating it/ seeing a picture/ reading about it. I'd love to know what your ricotta fail was. I've been thinking about trying that as part of my larger cheese-making adventure. Thanks again for all the great food inspiration!

I am going to have to thank Nicole for mentioning those mints to you. Thanks Allison for posting. I also love mint cookies. I have never had any homemade mints. I have always bought them at the store. Now I have to get someone to go shopping for me. They look so good in the pictures. My mouth is already watering.

thanks for posting this! Now I can get my fix of Thin Mints whenever I like.

I wonder if you could use the chocolate frosting as just a filling between two cookies. Then it might not be as messy to handle.
